19th May 2010

Today I cook Ikan Bilis (anchovies) Sambal with Chapatti and sliced cucumber.



Ikan Bilis (anchovies) Sambal

3 Hand full of ikan bilis(anchovies)
1 onion
1 Tomato
2-3 curry leaves
1 tsp garlic & ginger paste
2 tbsp chili powder/ 3 tbsp chili paste
Salt to taste
Water

-cut the onion, tomato and curry leaves. keep a side.
-fry the ikan bilis(anchovies). crush it and keep a side
-saute the onion,garlic & ginger paste. Add in the tomato and curry leaves.
-after 1 min, add in the chili powder/chili paste. Mix well.
-add in the water for the chili paste or chili powder to cook.
-once there is no chili powder or paste smell and the gravy have thicken, add in the crushed ikan bilis(anchovies).
-mix well. Add salt and mix well again for 1min.
-Turn of the heat.
-Ikan Bilis (anchovies) Sambal is ready to be served.

Did Aloo Gobi with Prawn curry to eat with white rice and fried egg. Aloo means potato and Gobi means cauliflower.


Aloo Gobi with Prawn curry
100gm Cauliflower
100gm Potato
100gm Prawn (remove the head & clean it)
1 big Red Onion
1 big tomato
2 garlic -chopped
1tsp garam masala
1/2 inch cinnamon stick
2-3tbsp Meat curry powder
1 spring curry leaves
1tsp cumin
1tsp coriander
1 cup water
salt
oil
-Cut the cauliflower and potato. Keep aside
-Slice the onion and tomato. Keep a side.
-Grind the cumin and coriander in to a powder. keep a side.
-Heat a pan. Add oil and fry the cauliflower.
-After 1 min, add in the onion, garlic, tomato,potato,cinnamon stick,ground cumin and coriander. Mix well.
-After 2 min, add in the curry powder, garam masala, and the curry leaves. Mix well.
-Add in the water and let the potato to cook. Once the potato is cooked, add in the salt.
-Mix well. Once the gravy have thicken, remove from heat.
-Serve with rice or chapatti.

Did a simple food for the day, Tuna Sandwich.

Tuna Sandwich
1 can of Ayam Brand Chili Tuna
1 loaf of bread
1 tbsp Mayonnaise
1 cucumber -sliced
2 tomatoes -sliced
3-4 curry leaves -chopped

-Mix the chili tuna and mayonnaise in a bowl. Add in the chopped curry leaves. Mix well.
-Take a slice of bread and spread 1/2 tbsp or more of the tuna filling. Arrange the sliced tomato and cucumber as u wish.
-Place another slice of bread on top of the filling and cut across to make a triangle shape.
-Ready to be served.

I cooked a simple and easy food for today, Spaghetti Bolognaise.

Spaghetti Bolognaise

1/4 packet of spaghetti
1/2 bottle prego spaghetti sauce
50gm minced chicken
2-3 garlic -chopped
5 chicken balls-cut half
1tbsp olive oil
1/4 cup water
parsley for garnish -chopped
-Cook the Spaghetti according to the instructions on the packet. Keep aside.
-Heat a pan and add in the olive oil. Add the chopped garlic.
-Pour the prego spaghetti sauce. Turn the heat to low. Add the water and boil the sauce.
-After 2 min, add in the chicken balls and the minced chicken. Stir well.
-Once the sauce thicken, Turn off the heat.
-You can serve it separate(spaghetti and sauce) or
-Add the sauce in to the cooked spaghetti and mix well. Garnish with chopped parsley.

10th May 2010

Today I make Kuih Ketayap (pancake with coconut filling) and fried rice.

Kuih Ketayap
1 cup All purpose flour

pinch of salt

2tbsp oil

few drops of green food colouring

-Mix all and make a smooth batter.

-Keep a side for 5-10min.
-Heat a flat pan. Pour the batter and using the back of ladle, spread the batter in a circular motion to make a round shape.

-Once it is cooked, turn the pancake. Cook for a minute. Remove from heat.
-Add 1Tbsp of he coconut filling and roll like doing spring roll.

-Ready to be served.


Filling

2 cups grated coconut

1 cup brown sugar

pinch of salt

-Heat a pan and add the grated coconut. Fry without oil for 10min.

-Remove from the h
eat. Let the coconut cool for a while.
-Add the brown sugar, and a pinch of salt.

-Mix well.

-Coconut filling is ready.




Fried Rice
3 cups cooked rice

1 Onion-chopped

1 Red pepper -chopped

1/4 Beijing cabbage

2 eggs

4 Fish balls -cut

1 Fish cake - sliced
1 pack Adabi Nasi Goreng Cina powder

10gm Anchovies

3tbsp chili paste

salt

oil

chopped red pepper for garnish


-Fry the fish balls,fish cake, anchovies. K
eep a side.
-scramble the eggs. keep a side

-Saute chopped onion and red pepper . Add the chili paste and Adabi Nasi Goreng Cina powder. mix well.

- Add the rice, cabbage, fried fish balls,fish cake, anchovies and scrambled egg.

-Mix well. Add salt for taste.

-Remove from heat. Garnish with chopped red pepper and half cooked egg.

Happy Mother's Day!!!
Today was quite a busy day for me. Receive 4 orders for mother's day cake and have to prepare food for barbecue dinner. I have no time to cook lunch, so my hubby cooked maggi curry for both of us. Most of us know how to cook maggi, so i'll not post the recipe for maggi curry. For dinner I cooked Fried Beehon, baked Vanilla cake and reheat the leftover kerala chicken. Hubby cooked sardine sambal and did chicken wings barbecue. My sister cooked prawn sambal.




Fried Beehon
1 packet Beehon
1 onion -chopped
2tbsp garlic and ginger paste
3tbsp chili paste
1 tomato -chopped
2 eggs
5 fish balls -sliced
1 fish cake -sliced
1 white tauhu -sliced
1/4 cabbage -cut
2 red chili -sliced
salt
oil
water

-Soak the beehon in a pot of water for 1 hour. Strained & keep a side.
-Fry the sliced fish balls, fish cake, white tauhu, and scramble the eggs. keep a side.
-In a pan, add 2tbsp oil and saute the onion, ginger & garlic paste, and tomato.
-Add chili powder and mix well. Add salt.
-Add the strained beehon,cabbage, fried fish balls, fish cake, white tauhu, and scrambled eggs.
-Mix well. Sprinkle 4tbsp water. Mix well.
-Garnish with red chili. Ready to be served.

8th May 2010

My hubby invited his childhood friend for lunch at our house. I cooked white rice, kerala chicken,mixed vege, and dhall curry for lunch.

Kerala Chicken

1kg Chicken -cut into pieces
2tbsp Red chili powder (i use chili paste)
1/2tsp Turmeric powder
1tbsp garam masala
2tbsp Ginger garlic paste
5-6 Onion -medium size
2 big Tomatoes -chopped
1 1/2 cups water
1/2-1 cup oil
1 spring curry leaves
salt as required.

-Mix chicken, red chili powder, turmeric powder, garam masala, garlic and ginger paste. Mix well and keep aside.
-Saute onion, tomatoes and curry leaves until the onion turns brown. Add in the chicken mix and salt. Mix well. Add a bit of water.
-Cover and cook for 5-10min. Remove the chicken pieces.
-Heat oil in a pan. Fry the chicken pieces.
-For the remaining gravy, add water and saute till it's dark moorish brown in color.
-Add the fried chicken to the thicken gravy and mix well.
-Garnish with a bit of curry leaves and serve hot with white rice/chappati.




Mixed Vege
100gm Broccoli
100gm Carrot
100gm Cauliflower
3-4 dry mushroom -soak in water
1 onion
2-3 garlic
3tbsp Oyster sauce
pepper and salt for taste
oil

-Cut the broccoli, carrot, cauliflower, soaked mushroom into pieces.
-Saute onion and garlic till onion turns brown.
-Add in the broccoli, carrot, cauliflower and soaked mushroom. Mix well for 5min.
-Add in the oyster sauce, pepper and salt. Mix well and remove from fire.




Dhall Curry

100gm dhall - soaked in water for 1 hour.
1/2 tsp turmeric powder
2 garlic
pinch of salt

1/2 tsp mustard seed,cumin seed, fenugreek seed
1 onion
1 potato
1 tomato
1 round brinjal/aubergine
1 spring curry leaves
4tbsp tamarind juice
oil

-Boil the dhall,turmeric powder, garlic and salt. Boil until the dhall turns soft.
-Cut the potato, tomato, and brinjal/aubergine into pieces.
-In another pan, heat oil and add in the mustard seed,cumin seed, fenugreek seed. Add in the onion when the seed starts to pop.
-Add in the potato, tomato and brinjal/aubergine. Mix well.
-Add in the dhall, tamarind juice. Boil until the potato is cooked.
-Turn off the heat and garnish with the curry leaves.

Today we went out for makan..we went to one of the chinese restaurant in Dataran Sunway(opposite DU cafe). we ordered lobak, grilled fish,and chicken with long beans sambal..the food was delicious and our stomach was very full.

6th May 2010

Today my hubby said he will be coming home late and don't want dinner. So I did simple dinner for myself. Today's food will be Egg toast and Vanilla Crepes.

Egg Toast
1 egg -beaten
1tbsp Milk
pinch of salt
4pcs white bread

-Beat the egg,milk ad salt.
-Heat a pan. Dip a white bread in to the egg mixture.
-Toast the bread.
-Serve it with chili sauce and mayonnaise.




Vanilla Crepes

1 eggs
250ml fresh milk
125gm all purpose flour ( Use superfine flour or High Protein Flour for
best result)
1/4 tspn salt
1 tbsp caster sugar
1 tsp vanilla essence

1 tbsp butter, melted

Method:
1. Combine all ingredients and beat on high speed for 5 minutes. Let batter stand
for 15 minutes.
2. Pour about one spatula of batter on pre-heated non-stick frying pan. Use crepes pan
if you own one.
3. Lift the pan off the heat and tilt it so that the batter forms an even, thin layer on the pan.
4. Cook until it sets and the bottom is golden.
5. Remove from the pan and place on grease proof paper.
Serve immediately or freeze in airtight
container for up to one month.
(*Tips to freeze : Stack the finished crepes between sheets of grease proof paper and keep in
airtight container)
-I add some chocolate rice inside the crepes.

Tuesday..
I cooked a simple dinner for today... Ikan Bilis (anchovies) Sambal and serve it with Chappati.



Ikan Bilis (anchovies) Sambal

1 onion

1 Potato

1 Tomato

2-3 curry leaves

1 tsp garlic & ginger paste

2 tbsp chili powder/ 3 tbsp chili paste

Monday...
I just reheat the fish head curry that my mom packed for me on Sunday and serve it with stir fried cabbage, papadam, fried egg and rice.



Stir Fried Cabbage
1/2 of Beijing cabbage
1 small onion
1 green/red chili

2-3 curry leaves

1/4 tsp turmeric

pinch of salt


-cut the Beijing cabbage, onion, chili, curry leaves.
-heat 1tbsp oil and saute onion, chili, curry leaves. Once the onion is half cooked, add in the cabbage, salt, turmeric. mix well.
-after 1min, turn of the heat.
-Stir fried cabbage is ready to be served.

2nd May 2010

We had lunch at my mom's house. My mom cooked Fish Head curry with fried long beans...she packed some curries for us...


and for Dinner, I make egg sandwich. Just a simple dinner because we had a heavy lunch...
Egg Sandwich
1 hard boiled egg
2tsp Mayonnaise
2-3 curry leaves
salt and pepper for taste
tomato
cucumber
salad leaves
Bread

-mash the hard boiled egg. Add in the mayonnaise,salt, pepper, minced curry leaves. Mix well.
-place sliced tomatoes, cucumber,salad leaves and the egg filling on one bread. Top it with another bread. Cut it cross and serve.

Happy Labour's Day...
Today we went to Digital Mall in Sec 14, PJ. Next to Digital Mall, we saw a Kopitiam,Tang Chao Cafe. We decide to take our tea time there. The environment was very nice. I had a hot nescafe, and hubby had a hot black coffee. We ordered Toast with Chicken Curry, Spring Roll ,and Longan with Sea Coconut drink. The food there was really nice and tasty. The price also reasonable.
